Ingredients

Salad

  • 1 jar of artichokes
  • 6 broccoli florets
  • 1 bell pepper, small
  • 1-2 sprigs spring onions, to taste
  • 1 handful of pine nuts, to taste

Dressing

  • 50g creamy yoghurt
  • 1 orange
  • 1 clove of garlic , small
  • salt, to taste
  • pepper, to taste
  • 1 pinch of sugar

Utensils

  • knife
  • cutting board
  • bowl
  • spoon

Instructions

Prepare the salad

  1. Mix the broccoli florets with the artichokes in a salad bowl.
  2. Cut the red peppers into large cubes.
  3. Roast the pine nuts in a pan and let them cool.

Prepare the dressing with spring onions

  1. Cut the spring onions into rings.
  2. Juice from one orange mix with the creamy yoghurt.
  3. Add the crushed garlic and the spring onions.
  4. Season the broccoli salad with salt, pepper and a pinch of sugar.
  5. Add the dressing to the salad and mix well.
  6. Sprinkle with the pine nuts and enjoy.
