Juicy broccoli salad with artichokes, oranges and yoghurt
Ingredients
Salad
- 1 jar of artichokes
- 6 broccoli florets
- 1 bell pepper, small
- 1-2 sprigs spring onions, to taste
- 1 handful of pine nuts, to taste
Dressing
- 50g creamy yoghurt
- 1 orange
- 1 clove of garlic , small
- salt, to taste
- pepper, to taste
- 1 pinch of sugar
Utensils

- cutting board
- bowl
- spoon
Instructions
Prepare the salad
- Mix the broccoli florets with the artichokes in a salad bowl.
- Cut the red peppers into large cubes.
- Roast the pine nuts in a pan and let them cool.
Prepare the dressing with spring onions
- Cut the spring onions into rings.
- Juice from one orange mix with the creamy yoghurt.
- Add the crushed garlic and the spring onions.
- Season the broccoli salad with salt, pepper and a pinch of sugar.
- Add the dressing to the salad and mix well.
- Sprinkle with the pine nuts and enjoy.
