Homemade snack sausages with nutmeg and garlic

These savory, thin sausages are quick and easy to make at home. They taste just as delicious as the store-bought sausages. They may take a little longer to prepare, but they’re worth the effort.

  • 770g Lean Pork
  • 2 Garlic Cloves
  • 11g Nitrite Salt
  • 11g Table Salt
  • 1 Pinch Sugar
  • Nutmeg Powder, to taste
  • Black Pepper, to taste


  1. Cut the pork into large cubes.
  2. Place in the freezer for 40 minutes.
  3. Peel the garlic and crush through a garlic press.
  4. Put the meat through a meat grinder.
  5. Nitrite salt, table salt, sugar, garlic and spices add to the meat and mix thoroughly.
  6. Place the meat in the fridge for 12 hours.
  7. Place the meat in a piping bag with a thin nozzle.
  8. Preheat the oven to 50°C, switch on the fan and only let the base heat up.
  9. Line a baking sheet with parchment paper.
  10. Scoop the meat mixture onto the baking sheet in thin, long sausages.
  11. Dry the sausages in the oven with the door ajar for 3 hours, then turn and continue drying for a further 3 hours.
  12. The sausages after cooking Leave at room temperature for 1 hour.
