Homemade ice cream with currants and vanilla

A homemade, creamy and delicious black currant ice cream. You do not need an ice cream maker or other special kitchen utensils to prepare this ice cream. It is very easy and quick to prepare and a real treat in summer.

  • 500 g blackcurrants
  • 150 g sugar
  • 300 ml whipping cream, min. 33% fat, cold
  • 1 tsp vanilla extract


  1. Place a large, covered container in the freezer while you prepare the ice cream mix.
  2. Wash the berries and place in a saucepan and bring to a boil over medium-high heat.
  3. The currants should begin to pop and release their juice.
  4. Pass the berries through a sieve to remove the skins and seeds.
  5. While the berries are still warm, dissolve the sugar and vanilla sugar in them.
  6. Add more sugar if necessary.
  7. Let the berries cool down.
  8. Use a mixer to whip the cold cream into a fluffy, creamy mass.
  9. Pour the cream into the berry mixture and mix gently.
  10. Pour the liquid ice cream mixture into the cold container.
  11. Place in the freezer for at least 2 hours, to allow the dessert to freeze.
  12. Remove the ice cream from the freezer 20-30 minutes before serving to make portioning easier.
