The delicious Herring Rollmops, which are topped with mustard, onions and pickles and then marinated, are a delicious, moderately salty starter in Europe.

Herring Rollmops – Snack with herring

Ingredients

  • 1 onion
  • 4 gherkins
  • 8 herring fillets
  • Ground black pepper, to taste
  • 2 tbsp mustard
  • 120ml white wine vinegar
  • 250-300ml water
  • 1 bay leaf
  • 3 tbsp vegetable oil

Instructions

  1. Peel the onion and chop finely.
  2. Cut the gherkins lengthways.
  3. Season the herring fillets with pepper and brush with mustard.
  4. Spread half of the onions on top.
  5. Top each fillet with half a gherkin.
  6. Roll up the filled herring fillets.
  7. Secure with wooden skewers or toothpicks.
  8. Layer Rollmops snacks in a glass.
  9. Pour the water and wine vinegar into a saucepan.
  10. Add the remaining onions and the bay leaf.
  11. Bring the vinegar water to the boil .
  12. Remove from the heat and let cool.
  13. Mix the vinegar water with the oil.
  14. Cover the herring rollmops with the marinade.
  15. Refrigerate to marinate for 3 days.
