Steamed noodles, also known as strudel, can be made from yeast dough or without yeast. The strudli come on potatoes, meat and white cabbage and are even steamed by the rising steam. The best thing about this dish is that you have a stew of meat, potatoes and white cabbage and cook the steamed dumplings as a side dish in the pot at the same time.

Ingredients

  • 500g pork
  • 700g potatoes
  • 1 onion
  • 1 carrot
  • 400g white cabbage, or sauerkraut
  • 2 tbsp vegetable oil, plus some for greasing
  • 600-700ml water
  • 2 eggs
  • 250 ml kefir
  • salt, to taste
  • 500 g flour
  • 2 tsp baking powder
  • black pepper, to taste

Utensils

  • kitchen scales
  • measuring cup
  • cutting board
  • knife
  • vegetable peeler
  • grater
  • pot or deep pan with lid
  • bowl
  • sieve
  • whisk
  • rolling pin
  • pasting brush
  • wooden spoon

Instructions

  1. Wash the meat thoroughly, cut into large cubes.
  2. Peel and wash the vegetables.
  3. Dice the potatoes.
  4. Finely chop the onions.
  5. Grate the carrot on a medium grater.
  6. Clean the white cabbage and slice into fine strips .
  7. Heat the oil in a saucepan or deep pan.
  8. Fry the meat in it over high heat for about 5-7 minutes until golden brown.
  9. Add the onions and sauté for about 3-4 minutes.
  10. With 100 1 ml of water.
  11. Let the meat simmer, covered, for approx. 15-20 minutes.
  12. Meanwhile, whisk the eggs in a bowl with a whisk.
  13. Add the kefir and a pinch of salt and mix well.
  14. Mix the flour with the baking powder .
  15. Sieve into the egg and kefir mixture.
  16. Knead into a soft, elastic dough.
  17. Roll out the dough into a rectangle approx. 2-3 mm thick.

The steamed noodles can be served with melted butter if you like.
