Ingredients

  • 4-5 mackerel
  • 5-7 sprigs of parsley, or other herbs
  • 2 cloves of garlic
  • 3 lemons
  • 2-3 tbsp vegetable oil
  • 1½-2 tsp salt
  • 1 tsp black pepper

Utensils

  • tablespoon

  • filleting knife
  • tweezers
  • cutting board
  • bowl with lid
  • blender
  • grater
  • metal skewers

Instructions

  • Eviscerate the mackerel.
  • Cut off the head and tail.
  • Fillet the fish with a filleting knife.
  • Remove the bones with tweezers.
  • Each mackerel becomes 2 fillets.
  • Wash the fish fillets and pat dry with paper towels .
  • Put in a bowl.
  • Wash the parsley, shake dry.
  • Peel the garlic.
  • Wash the lemons well and dry them.
  • Grab half a teaspoon of zest with a fine grater.
  • Cut the remaining lemons into pieces.
  • Crush the parsley and garlic in a blender.
  • Mix the lemon peel, salt and pepper into a marinade.
  • Add the marinade to the fish fillets.
  • Leave the fish fillets, covered, to marinate in the refrigerator for approx. 1.5-2 hours.
  • Roll the fish fillets together.
  • Skewer the lemon pieces alternately on metal skewers.
  • Grill the shashlik on charcoal for about 10 minutes on all sides until golden brown.
  • Fresh vegetable salad goes perfectly with the grilled fish.
