Grilled chicken breast fillets with green asparagus and tomatoes

Grilled chicken breast fillets are quick and easy to prepare and go wonderfully with asparagus. This grilled chicken is packed with flavor, perfectly tender and juicy.

Ingredients

  • 6 chicken breast fillets
  • 500g green asparagus
  • 200g cherry tomatoes

Marinade

  • 1/2 cup olive oil
  • 3 tbsp brown sugar
  • 3 tbsp soy sauce
  • 1 1/2 tsp lemon zest, grated
  • 1 tbsp Parsley leaves, chopped
  • 1 tbsp Thyme leaves, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tsp garlic, chopped

Instructions

  1. Place the chicken breasts in a bowl.
  2. For the marinade: In a medium-sized bowl, combine the olive oil, brown sugar, soy sauce, lemon zest, parsley, thyme, salt, pepper, and garlic.
  3. Pour the marinade over the chicken, leaving some marinade for leave the asparagus.
  4. Marine for a minimum of 1 hour and up to 24 hours.
  5. Prepare the green asparagus: remove the woody ends and brush with the marinade using a grill brush.
  6. Heat the grill.
  7. Place the chicken fillets on top .
  8. Fry for 6 to 8 minutes on each side, or until a thermometer reads 165 degrees Fahrenheit at the thickest part of the chicken.
  9. Leave the chicken to rest for 5 minutes.
  10. Heat a griddle and fry the green asparagus spears.
  11. At the end of the grilling time, add the tomatoes and toss them well in the pan.
  12. Place the grilled chicken breast fillets on plates with green asparagus and tomatoes and enjoy with a glass of wine or beer n.
