Greek nut cake with walnuts and spices
Ingredients
Dough
- 5 eggs
- 125g caster sugar
- 175g flour
- 100g butter, + for greasing
- 300 walnuts
- 2 tbsp breadcrumbs
- 1 tsp ground cinnamon
- cloves, to taste
- 7g dry yeast
- 2 tbsp brandy
- icing sugar, or chopped nuts for sprinkling
- 1 pinch salt
Syrup
- 150 g sugar
- 1 lemon
- 1 cinnamon stick
Utensils

Instructions
- Chop the walnuts in a blender.
- Mix the flour with the nuts, yeast, cinnamon and cloves in a bowl.
- Separate the egg yolks from the egg whites.
- Mix the butter with the icing sugar.
- Add the egg yolks one at a time.
- Buttercream in the Add the flour mixture and the brandy.
- The dough will be sticky and elastic.
- Beat the egg whites with a pinch of salt until stiff.
- Gradually add the egg whites to the dough, stirring gently until you get a sticky and smooth mass.
- Preheat the oven to 180° C.
- Stir the batter well and place in a buttered and floured baking tin.
- Bake the cake for approx. 30 – 40 minutes.
- 250 ml water with sugar, lemon juice and cinnamon stick for 10 minutes Boil in a saucepan for a long time.
- Pour the finished syrup over the nut cake.
- Sprinkle the nut cake with powdered sugar or chopped nuts before serving.
