Ingredients

Dough

  • 5 eggs
  • 125g caster sugar
  • 175g flour
  • 100g butter, + for greasing
  • 300 walnuts
  • 2 tbsp breadcrumbs
  • 1 tsp ground cinnamon
  • cloves, to taste
  • 7g dry yeast
  • 2 tbsp brandy
  • icing sugar, or chopped nuts for sprinkling
  • 1 pinch salt

Syrup

  • 150 g sugar
  • 1 lemon
  • 1 cinnamon stick

Utensils

  • Blender
  • Bowl
  • Hand mixer
  • Baking pan
  • Pot
  • Spoon

Instructions

  1. Chop the walnuts in a blender.
  2. Mix the flour with the nuts, yeast, cinnamon and cloves in a bowl.
  3. Separate the egg yolks from the egg whites.
  4. Mix the butter with the icing sugar.
  5. Add the egg yolks one at a time.

  8. Beat the egg whites with a pinch of salt until stiff.
  9. Gradually add the egg whites to the dough, stirring gently until you get a sticky and smooth mass.
  10. Preheat the oven to 180° C.
  11. Stir the batter well and place in a buttered and floured baking tin.
  12. Bake the cake for approx. 30 – 40 minutes.
  13. 250 ml water with sugar, lemon juice and cinnamon stick for 10 minutes Boil in a saucepan for a long time.
  14. Pour the finished syrup over the nut cake.
  15. Sprinkle the nut cake with powdered sugar or chopped nuts before serving.
