Ingredients

  • 5.5 kg goose, whole
  • Salt, to taste
  • Pepper, to taste
  • 1.3 kg potatoes, preferably small

Instructions

  1. Rinse the goose in cold water, dry with paper towels.
  2. Salt the inside and outside.
  3. Place in the fridge for 6 hours or overnight.
  4. Take the goose out of the fridge and pat dry with
  5. paper towels.
  6. One Leave at room temperature for an hour.
  7. Carve the goose at intervals with the edge of a knife.
  8. Season with salt and pepper.
  9. Place the goose in a roasting pan with wire rack.
  10. Bake at 160°C for 1 hour.
  11. Potatoes peel and cook in boiling salted water for 3-5 minutes.
  12. Strain the liquid.
  13. Remove the goose from the oven and drain the fat.
  14. Lift the goose and place the potatoes underneath.
  15. Bake at 160°C for a further hour .
  16. Reduce the oven temperature to 140°C and another 30-45 minutes.
  17. Let the goose rest for 20-30 minutes before serving.
  18. Place the potatoes on a plate and cover with foil.
