Gluten-free waffles with coconut milk and almond flour
Ingredients
- 1 cup almond flour
- ¹⁄₄ cup cornstarch
- 2 tsp cinnamon
- 1¹⁄₂ tsp baking powder
- ¹⁄₄ tsp salt
- 3 eggs
- 2 tbsp butter
- ¹⁄₂ cup coconut milk
- 2 tbsp maple syrup
- 1¹⁄₂ tsp vanilla extract

Instructions
- Mix together the almond flour, cornstarch, baking powder, cinnamon and salt.
- Separate the eggs.
- Use a mixer to mix together the softened butter, maple syrup, vanilla extract and coconut milk.
- Add the egg yolks one at a time and beat until fluffy.
- Mix the flour mixture well stir.
- Beat the egg whites until stiff and fold into the batter.
- Grip the preheated waffle iron with coconut oil using a pastry brush.
- Pour the waffle batter into the waffle iron in portions and bake until golden brown.
- Add powdered sugar, ice cream or maple syrup as desired serve.
