Ingredients

  • 1 cup almond flour
  • ¹⁄₄ cup cornstarch
  • 2 tsp cinnamon
  • 1¹⁄₂ tsp baking powder
  • ¹⁄₄ tsp salt
  • 3 eggs
  • 2 tbsp butter
  • ¹⁄₂ cup coconut milk
  • 2 tbsp maple syrup
  • 1¹⁄₂ tsp vanilla extract

Utensils

  • hand mixer
  • mixing beaker
  • kitchen spatula
  • waffle maker

Instructions

  1. Mix together the almond flour, cornstarch, baking powder, cinnamon and salt.
  2. Separate the eggs.
  3. Use a mixer to mix together the softened butter, maple syrup, vanilla extract and coconut milk.
  4. Add the egg yolks one at a time and beat until fluffy.
  5. Mix the flour mixture well stir.
  6. Beat the egg whites until stiff and fold into the batter.
  7. Grip the preheated waffle iron with coconut oil using a pastry brush.
  8. Pour the waffle batter into the waffle iron in portions and bake until golden brown.
  9. Add powdered sugar, ice cream or maple syrup as desired serve.
