Fruity crumble cake with strawberries

This fruity crumble cake with strawberries, rhubarb and jam is a great summertime cake. The simple fruit cake with sweet, delicious red berries and tart rhubarb is prepared quickly and can easily outshine the crumble.

  • 375 g flour
  • 250 g butter, cold, in pieces
  • 150 g sugar
  • 1 pinch salt
  • 1 p. Vanilla sugar
  • 100 g strawberry rhubarb jam
  • 200 g strawberries
  • 2 sticks of rhubarb


  1. In a food processor, combine the flour, butter, sugar, salt, and vanilla sugar.
  2. Process into crumbles.
  3. Spread 2/3 of the crumbles into a tart pan, pressing down with your hands to form a smooth base.
  4. Strawberry-rhubarb- Spread the jam on the pastry base.
  5. Have the strawberries.
  6. Cut the rhubarb stalks into pieces.
  7. Spread the strawberries and rhubarb over the jam layer.
  8. Sprinkle the remaining crumble on top.
  9. Bake the crumble cake in a preheated oven at 180 degrees approx. 40 -Bake for 45 minutes.
  10. Remove the cake from the oven, let cool and cut into pieces.
