Fresh avocado dressing with yoghurt and olive oil

An avocado dressing can be prepared quickly and tastes fantastic with leaf salads and fresh vegetables. The dressing becomes very creamy with avocado and gets a pleasant acidity with lemon juice.

- 1 avocado, small
- 0.5 tbsp lemon juice, freshly squeezed
- 1 tbsp Greek yoghurt
- 1 tbsp olive oil
- sea salt, to taste
- Half the avocado and scoop out the flesh with a tablespoon, remove the stone.
- Mix the avocado in a bowl with Greek yoghurt, lemon juice and olive oil.
- Season to taste.
- Serve the avocado dressing with a fresh salad.
