Flavorful sausages also include chicken

  • 3m Natural Casings
  • 2kg Chicken Legs
  • 4-5 Cloves Garlic
  • 2 tsp Salt
  • Black Pepper, to taste
  • 3 tsp Mustard
  • Turmeric, to taste
  • Poultry Seasoning, to taste
  • 300-400 ml of water


  1. Rinse the casings well, place in a bowl and soak in the water for 30-60 minutes, following the manufacturer’s instructions.
  2. Remove the chicken from the bones and skin.
  3. Cut into medium-sized pieces.
  4. Skin and inside Pass the fat through a meat grinder.
  5. Press the garlic through a press.
  6. Put the chicken pieces, skin and garlic in a bowl.
  7. Add the salt, pepper, mustard, turmeric and other spices.
  8. Mix well.
  9. Pour in 150 ml of water and mix well again.
  10. Place the sausage attachment on the meat grinder and fill the sausage casing with the mixture.
  11. Cover the baking tray with aluminum foil.
  12. Place the sausage on it and prick with the needle from one side.
  13. Add some water place in the baking tray.
  14. Bake at 180 °C for approx. 1 hour.
  15. Then drain the liquid from the baking tray.
  16. Turn the sausage over and pierce it again with a needle.
  17. Bake the sausage in the oven for a further 20 – 25 minutes and then add serve with a salad.
