Filled pancake rolls with vanilla ice cream and strawberry sauce
Ingredients
Dough
- 150 g flour
- 275 ml milk
- 2 eggs
- 40 g sugar
- 1 pinch salt
- Vanilla, to taste
- Butter, for frying to taste
Filling
- 80 g strawberries
- 2 Kiwi
- 2 egg whites
- 2 tbsp butter, soft
- 4 tbsp sugar
- 250 g quark
- Vanilla, as desired

Instructions
Prepare the batter
- Mix the eggs with the sugar and a pinch of salt.
- Gradually add the flour and milk.
- Let the batter rest for 30 minutes.
- In a pan, fry the pancakes in batches in the butter.
Filling Prepare
- Separate the eggs for the filling.
- Beat the egg whites with the sugar until fluffy.
- Mix in the butter, vanilla and quark.
- Clean and chop the fresh strawberries and add to the filling.
- Peel the kiwi and also cut into small pieces.
- Fill the pancakes with the cream, roll up and cut the rolls into 4 pieces.
- Distribute the pancake rolls on a plate.
- Serve with vanilla ice cream and strawberry sauce.
The grated lemon zest in the batter gives the pancakes more freshness and flavor! The pancakes can be served with different toppings, such as fruit sauce, chocolate sauce, ice cream, berries, etc.!
