Energy balls with apricots, almonds and chia seeds
Ingredients
- 170g apricots, dried
- 200g almonds, unroasted
- 2 tbsp almond oil
- 1 tbsp chia seeds
- ½ tsp vanilla extract
- ¼ tsp nutmeg, ground
- ½ tsp cinnamon, ground
- 1 pinch Salt
- 1-2 tbsp water
- 50 g desiccated coconut
Utensils
- kitchen scales
- tablespoon
- teaspoon
- stand mixer
- cake plate
- baking paper
Instructions
- Put all ingredients in a blender.
- Chop finely on low speed.
- Add 1 tablespoon of water and mix.
- If the mixture is still too dry, just add a little more water carefully.
- From the resulting mixture Form balls about the size of a walnut with moistened hands or a teaspoon.
- Roll these energy balls in coconut flakes.
- Place on a cake plate lined with baking paper.
- Put the energy balls in the refrigerator for approx. 40 minutes to cool.
- The energy balls chilled Serve as a snack or with dessert.
Energy balls made from dried fruits such as dates, figs or apricots, combined with nuts and seeds, have long been considered a healthy in-between snack and give you many hours of energy. They’re vegan and super healthy, with most being refined-sugar free.
