Egg omelet with beans, spices and green herbs
Ingredients
- 250g green beans, fresh or frozen
- Salt, to taste
- 6 eggs
- Pepper, to taste
- 2 tbsp vegetable oil
- Spices, to taste
- Green herbs, to taste

Instructions
- For fresh beans, remove the tops and cut the beans into several pieces.
- Boil the water in the saucepan and add salt.
- Put the beans in boiling water.
- Boil the fresh beans for about 3 minutes. Cook the frozen beans for about 5 minutes.
- Put the beans in a colander and rinse with cold water.
- Leave them in the colander for a few minutes to drain off all the water.
- In a bowl, beat the eggs and add the beans .
- Season with salt and pepper.
- Heat the pan with a little oil and pour the egg mixture into the pan.
- Sprinkle with spices and chopped herbs, if desired.
- Close the pan with the lid and cook for about 10 minutes Fry over medium heat until eggs are set and colouring.
