Ingredients

  • 4 bananas, very ripe
  • 60 g honey
  • 3 eggs
  • 400 g wholemeal flour, or spelled flour
  • 240 ml milk, 3.8% fat
  • 1 p. Baking powder
  • 1 pinch of salt
  • vanilla pulp, to taste
  • 3 tbsp oil

Instructions

  1. Preheat the oven to 175°C.
  2. Put the peeled bananas in a bowl with the honey and puree with an immersion blender.
  3. Add the eggs and mix with the pureed bananas.
  4. Spelt flour, baking powder, vanilla, pinch of salt and stir in the oil.
  5. Gradually add the milk and stir to form a smooth batter.
  6. Pour the batter into muffin cases.
  7. Bake the banana muffins in the oven for about 30-40 minutes.
