Ingredients

  • 1½ tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 2½ – ​​​​3 kg duck
  • 5 apples, green, eg Granny Smith
  • 50 ml honey
  • 50 ml orange juice
  • 2 tbsp lemon juice

Instructions

  1. Preheat the oven to 180 °C.
  2. Mix the salt, pepper, garlic and paprika.
  3. Remove the duck, wash well and pat dry.
  4. Rub the whole duck with the spice mixture.
  5. Peel and core the apples and cut into quarters.
  6. Stuff the duck with apples.
  7. Tie the legs together with kitchen twine.
  8. Place the duck in a roasting dish.
  9. Bake the duck in the oven at 180 °C for 50 minutes.
  10. Turn the duck over and bake for a further 50 minutes.
  11. Mix the orange juice with the honey and lemon juice.
  12. Remove the duck from the oven and brush generously with honey glaze.
  13. Let the stuffed duck rest for 20 minutes before serving.
