Delicious zucchini spread as an accompaniment to grilled meat
Ingredients
- 1 kg courgettes, yellow or green
- 1 onion
- 300 g tomatoes
- 50 ml oil
- parsley, to taste
- salt, to taste
- pepper, to taste
Utensils
- knife
- cutting board
- pot
- mixing spoon
Instructions
- Chop the onion for the spread.
- Sauté in a slightly larger saucepan.
- Cut the zucchini lengthwise into 4 parts.
- Cut into 5 mm thick pieces.
- Add the zucchini to the onions and cook on a medium Fry over heat.
- When the courgettes soften, add the chopped tomatoes.
- Simmer for 15-20 minutes, stirring occasionally.
- When the spread is thick, remove the pan from the heat.
- Zucchini spread with parsley garnish and season with salt and pepper.
