Delicious mashed potatoes with boiled eggs and green onions
Ingredients
- 500 g potatoes
- Salt, to taste
- 3 eggs
- 3 tbsp milk, or cream
- Black pepper, to taste
- Butter, to taste
- Spring onions, to taste
- Parsley, to taste
Utensils

Instructions
- Peel and wash the potatoes.
- Place in a saucepan with salted water.
- Approx. Cook for 20-25 minutes until soft.
- Drain the water.
- Mash the potatoes with a potato masher.
- Boil the eggs in another saucepan for 10 minutes.
- Resh, peel and chop finely.
- Rinse the spring onions and shake dry.
- Chop the onions very finely.
- Add the eggs and spring onions to the puree and mix well.
- Let it steep for about 5-10 minutes.
- Stir the milk into the puree.
- Season to taste with salt and pepper.
- Potato puree with Transfer eggs to a deep serving bowl.
- Garnish with chopped parsley, if desired, and serve with butter.
