Ingredients

  • 500 g potatoes
  • Salt, to taste
  • 3 eggs
  • 3 tbsp milk, or cream
  • Black pepper, to taste
  • Butter, to taste
  • Spring onions, to taste
  • Parsley, to taste

Utensils

  • kitchen scale
  • tablespoon
  • knife
  • vegetable peeler
  • cutting board
  • stewpot
  • potato masher
  • deep serving bowl

Instructions

  1. Peel and wash the potatoes.
  2. Place in a saucepan with salted water.
  3. Approx. Cook for 20-25 minutes until soft.
  4. Drain the water.
  5. Mash the potatoes with a potato masher.
  6. Boil the eggs in another saucepan for 10 minutes.
  7. Resh, peel and chop finely.
  8. Rinse the spring onions and shake dry.
  9. Chop the onions very finely.
  10. Add the eggs and spring onions to the puree and mix well.
  11. Let it steep for about 5-10 minutes.
  12. Stir the milk into the puree.
  13. Season to taste with salt and pepper.
  14. Potato puree with Transfer eggs to a deep serving bowl.
  15. Garnish with chopped parsley, if desired, and serve with butter.
