Delicious fondant potatoes with garlic from the oven

According to this French recipe, the are first fried in a frying pan. The vegetables then stew in the oven with broth, spices and garlic, unfolding an incredibly delicious aroma. This way the potato pieces will be crispy on the outside and very tender on the inside.

  • 4-5 potatoes, large
  • 2 cloves garlic
  • 2 tbsp vegetable oil
  • 50 g butter
  • 240 ml chicken stock
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • Salt, to taste
  • Black pepper, to taste


  1. Preheat the oven to 200°C.
  2. Peel the potatoes and cut them in half lengthways.
  3. Use the knife to cut each piece into a “barrel” shape.
  4. Crush the garlic with the knife.
  5. Peel the vegetable oil in a suitable oven Heat the frying pan.
  6. Place the potatoes cut-side down in the pan.
  7. Approx. Fry for 5-7 minutes until golden.
  8. Flip and cook another 5-7 minutes.
  9. Add the butter, broth, garlic, thyme and rosemary to the pan.
  10. Rob the pan in the oven for 20-30 minutes
  11. Season the fondant potatoes with salt and pepper.
  12. Pour the stock over before serving.
