Ingredients

Dough

  • 100 g butter, frozen
  • 2 egg yolks
  • 150 g flour
  • 70 g sugar
  • 1 pinch salt
  • 1 tsp baking powder

Filling

  • 300 g pumpkin
  • 20 g sugar
  • ½ orange, Organic
  • cinnamon, to taste

Instructions

Prepare the dough

  1. Mix the sifted flour, salt, sugar and baking powder in a bowl.
  2. Grate the frozen butter into the dry mixture using a coarse grater and knead in.
  3. Stir in the egg yolks and quickly work everything into a slightly crumbly dough.
  4. Line the bottom of an 18-20 cm tin with parchment paper.
  5. Pour 2/3 of the dry batter into the tin and press down firmly with the bottom of a glass or cup.
  6. Place the baking tin and bowl with the remaining batter in the Set in fridge.

Prepare filling

  1. Peel the pumpkin, remove the seeds and slice the flesh.
  2. Grate the pumpkin on a fine grater, add the zest and juice of half an orange.
