Ingredients

  • 300 g pumpkin, peeled
  • 1 banana
  • 2 eggs
  • 150 ml kefir
  • 3-4 tbsp sugar
  • 1 pinch salt
  • 8-10 tbsp flour
  • 1 tsp baking powder
  • ½ tsp cinnamon, ground
  • ½ tsp vanilla extract
  • 2-3 tbsp vegetable oil

Instructions

  1. Finely grate the pumpkin.
  2. Mash the banana with a fork.
  3. In a bowl, whisk the eggs together with the kefir, sugar and salt.
  4. Add the pumpkin and banana to the egg mixture and mix well.
  5. Gradually add the flour and stir until the batter is smooth.
  6. Add the baking powder, cinnamon and vanilla extract and mix well.
  7. Heat the vegetable oil in a frying pan.
  8. Cook the pancakes in batches over a medium heat for 2-3 minutes Fry until golden on each side.
  9. Serve the pancakes with a scoop of ice cream and nuts for dessert.
