Delicate pancakes with pumpkin and banana for dessert
Ingredients
- 300 g pumpkin, peeled
- 1 banana
- 2 eggs
- 150 ml kefir
- 3-4 tbsp sugar
- 1 pinch salt
- 8-10 tbsp flour
- 1 tsp baking powder
- ½ tsp cinnamon, ground
- ½ tsp vanilla extract
- 2-3 tbsp vegetable oil

Instructions
- Finely grate the pumpkin.
- Mash the banana with a fork.
- In a bowl, whisk the eggs together with the kefir, sugar and salt.
- Add the pumpkin and banana to the egg mixture and mix well.
- Gradually add the flour and stir until the batter is smooth.
- Add the baking powder, cinnamon and vanilla extract and mix well.
- Heat the vegetable oil in a frying pan.
- Cook the pancakes in batches over a medium heat for 2-3 minutes Fry until golden on each side.
- Serve the pancakes with a scoop of ice cream and nuts for dessert.
