Ingredients

Dough

  • 2 eggs
  • 70 g sugar
  • vanilla paste, optional
  • 50 ml oil
  • 130 g flour
  • 1 tsp baking powder
  • 50 ml mineral water, or orangeade
  • 2 tbsp chocolate sprinkles

Topping

  • 100 ml Cream, cold
  • 2 tsp San Apart
  • 125 g cream cheese
  • 1-2 tbsp powdered sugar
  • 8 biscuits

Sugar eyes

  • Blue sugar sprinkles
  • Blue food coloring, optional

Utensils

  • hand mixer
  • mixing bowl
  • piping bag
  • knife

Instructions

Prepare the dough

  1. Mix the egg with the sugar and vanilla paste until creamy.
  2. Stir in the oil.
  3. Mix together the flour and baking powder.
  4. Stir in the flour mixture alternately with the mineral water.
  5. Work everything into an even dough.
  6. Stir in chocolate sprinkles if desired.
  7. Line a muffin tin with paper cups.
  8. Divide the batter into 8 cups.
  9. Bake the muffins in a preheated oven at 170 degrees for approx. 25 minutes.
  10. Let the muffins cool down.

Topping

  1. For the frosting: Whip up the cold cream.
  2. When whipping, stir in 1 tsp of San Apart.
  3. Mix the cream cheese with 1 tsp of San Apart and sifted powdered sugar.
  4. Fold the heavy cream under the cream cheese.
  5. The cream with blue if desired Colour.
  6. Chill the frosting cream for 20 minutes.
  7. Pour the cream into a piping bag.
  8. Pipe the frosting onto the prepared muffins.
  9. Sprinkle with blue sugar pearls or dip in the sugar sprinkles.
  10. Use a knife slit a small slit in the side of the cupcakes.
  11. Insert a small cookie into each slit.
  12. Place the eyes and you have cute Cookie Monsters!
