Cucumber salad with radish, lamb’s lettuce, pomegranate seeds and herbs
Ingredients
- 130 g cucumber
- 100 g radish
- ¼ pomegranate
- 30-40 g lamb’s lettuce
- 1 sprig spring onion
- 2 sprigs dill
- 2-3 sprigs parsley
- salt, to taste
- pepper, to taste
- ¼ tsp agave syrup
- ¼ grapefruit
- 1 tbsp linseed oil
- 1 tbsp hemp oil
- 1 handful mixed sprouts, alfalfa sprouts, mung bean sprouts, red ones
- radish sprouts

Instructions
- Peel the radish.
- Finely slice the cucumber and radish.
- Clean the lamb’s lettuce.
- Remove the pomegranate seeds.
- Cut the lacuh onion into fine rings.
- Finely chop the dill and parsley.
- All in a salad bowl Mix.
- Season with salt and pepper.
- Squeeze out the grapefruit juice.
- Whip the linseed oil and hemp oil into the grapefruit juice with a whisk.
- Stir in the agave syrup.
- Stir the salad dressing into the vegetables.
- Stir the cucumber salad well , top with mixed sprouts and enjoy as a side dish for dinner or lunch.
