Crispy fried king prawns with garlic and spicy sauce

Prepare the shrimp

1. Peel the shrimp, but leave the tail end on.
2. Pull out the dark intestines with the tip of a knife.
3. Then wash the king prawns and pat dry.
4. Make a deep incision in the shrimp to open the shrimp.
5. Be careful not to split them in half.
6. Mix the sifted flour with salt, pepper and garlic in a bowl.
7. In a separate bowl, whisk the eggs with the water.
8. Put some breadcrumbs in a bowl and add more as needed.
9. Roll each shrimp in flour and dip in the whisked eggs.
10. Add to bowl with breadcrumbs and toss gently.
11. Place seafood in bowl and refrigerate for 30-60 minutes.
12. Remove, heat oil in a deep frying pan.
13. Put in some shrimp and fry for a few minutes until crispy.
14. Cook the rest of the shrimp in the same way.

Make the sauce

1. In a small bowl Heat the oil and ketchup in a saucepan over medium-high heat for 30-40 seconds, while stirring.
2. In a bowl, mix together the starch and water.
3. Add the vinegar, soy sauce, pepper, and cornstarch-water mixture to the saucepan.
4. Mix all together while stirring bring to a boil.
5. Simmer until sauce thickens.
6. Serve fried shrimp with sauce as an appetizer or snack.
