Ingredients

  • 30 g parmesan
  • 1 slice of white bread
  • 5 tbsp milk
  • 220 g pasta, e.g. penne
  • salt to taste
  • 80 g walnuts
  • 1 clove of garlic
  • 2 tbsp olive oil
  • black pepper, to taste
  • chives, to taste

Instructions

  1. Grate the Parmesan on a fine grater.
  2. Put the white bread in a small bowl.
  3. Pour the milk over it and let it soak for about 5-6 minutes.
  4. Cook the pasta in boiling salted water according to the instructions on the packet, but reduce the cooking time by 1 minute .
  5. Crush the Parmesan, walnuts and garlic in a food processor.
  6. Squeeze out the soaked bread and crumble slightly with your hands.
  7. Add the bread to the nut mixture and mix in the food processor.
  8. After straining the pasta, cook for approx Reserve a cup of pasta water and set aside.
  9. Add olive oil, 4-5 tablespoons reserved pasta water, salt and pepper to the nut mixture in the food processor and mix to form a nut sauce.
  10. Put the pasta back into the saucepan, pour over the nut sauce and stir.
  11. Simmer the pasta for about 1-2 minutes while stirring, gradually adding a little pasta water until the sauce has a creamy consistency.
  12. Sprinkle the pasta with chives before serving.
