Couscous salad with tomato and cucumber
Ingredients
- 75 g couscous
- 6 cherry tomatoes
- 2 cucumbers
- 1/2 paprika, red or yellow
- parsley, to taste
- chives, optional to taste
- olives, optional to taste
- 1 tbsp rapeseed oil
- 1/2 tbsp white wine vinegar
- salt, to taste
- pepper, to taste
Utensils

- cutting board
Instructions
- Pour hot water over the couscous and leave to swell for about 10 minutes.
- Cut the cucumbers and peppers into small pieces.
- Half the cherry tomatoes.
- Chop the parsley into small pieces.
- Mix the vegetables with the couscous.
- With rapeseed oil, vinegar , salt and pepper to taste.
- Sprinkle the couscous salad with chopped parsley and serve.
