  • 5-6 sprigs of mint
  • 100 g sugar
  • 1 egg
  • 100 g butter, softened
  • 200 g flour
  • 1 tsp baking powder


  1. Preheat the oven to 180°C top/bottom heat.
  2. Line a baking tray with baking paper.
  3. Pluck the mint leaves from the stems and puree them together with the sugar in a blender.
  4. Add the egg and softened butter to the mint puree and beat until smooth.
  5. Sieve the flour through a sieve.
  6. Add the sifted flour and baking powder and knead into a soft dough.
  7. Roll the dough into small balls and place them on a baking tray.
  8. Cook the biscuits in the preheated oven Bake for 12 to 15 minutes.
  9. Let the summer biscuits cool down and enjoy with tea or milk.
