Cold okroshka soup with sausage, buttermilk and mineral water

Ingredients

  • 4 potatoes
  • 4 eggs
  • 3 cucumbers, crooked cucumbers
  • 250 g radishes
  • 300 g boiled sausage, or smoked sausage
  • ½ bunch dill
  • ½ bunch chives
  • 1¹⁄₂ l buttermilk, or kefir
  • 1 l sparkling water
  • 1 tbsp mustard
  • 1 tbsp apple cider vinegar
  • salt, to taste

Instructions

  1. Boil the potatoes with the skin on for about 12-15 minutes and peel.
  2. Boil the eggs hard for 5-7 minutes, rinse with cold water and peel.
  3. Dice the potatoes, eggs, cucumber, radishes and sausage into small cubes.
  4. Chop the dill and chives.
  5. In a large saucepan, stir together the buttermilk, mineral water, mustard, vinegar and salt.
  6. Add the chopped ingredients and mix well.
  7. Season with salt and pepper to taste.
  8. Okroshka soup cold enjoy.
