Clafoutis dessert with apples and cinnamon from French cuisine

This French dessert resembles a casserole, an egg mousse, or is it a cake? Clafoutis consists of a rich egg batter that can be topped with different fruits such as apples, cherries or raspberries.

  • 3 apples
  • 1 tsp lemon juice
  • 2 tbsp butter + for greasing
  • 50g brown sugar, brown
  • ¹⁄₂ tsp cinnamon
  • 3 eggs
  • 1 p. vanilla sugar
  • 100 g sugar
  • 80 g flour
  • ¹⁄₂ tsp salt
  • 110 g sour cream


  1. Peel and core the apples.
  2. Cut the apples into slices or thin quarters.
  3. Mix the lemon juice in a bowl.
  4. Place the apples in a pan.
  5. Add the oil and cook over a medium heat for a few minutes let simmer.
  6. Add the brown sugar and cinnamon.
  7. Continue to cook until the apples are soft, stirring constantly.
  8. In a bowl, mix the eggs, vanilla sugar and white sugar together well.
  9. Gradually add the flour and add the salt and stir until smooth.
  10. Continue to stir with a whisk.
  11. Add the sour cream and pour in the milk.
  12. Mix everything together until smooth.
  13. Grease a large casserole dish or a few small ones.
  14. Pour in half the batter .
  15. Spread the apples on top and cover with the rest of the dough.
  16. Bake the clafoutis with apples and cinnamon in a preheated oven at 190 °C for 35–40 minutes.
  17. The dessert can be served warm or cold.
