Ingredients

  • 1 lemon, unwaxed
  • 240 g butter, softened
  • 200 g icing sugar
  • 4 eggs
  • 280 g flour
  • 6 g baking powder, approx. 2 tsp
  • icing sugar, for dusting

Utensils

  • Microplane grater
  • Hand mixer
  • Mixing bowl
  • Kitchen brush
  • Fir baking pan
  • Icing sugar shaker

Instructions

  1. Wash the lemon in hot water and grate the zest.
  2. Mix the butter and sugar in a bowl.
  3. Stir in the eggs.
  4. Sieve the flour with the baking powder into the butter-egg mixture.
  5. Add the lemon zest.
  6. Mix everything to a smooth batter.
  7. Grease the fir baking tin a little with butter.
  8. Pour in the batter and smooth it out.
  9. Bake the fir cake in a preheated oven at 180°C for 35-40 minutes. Do a chopstick test!
  10. Turn the Christmas cake out onto a wire rack and let it cool.
  11. Serve the Christmas cake dusted with icing sugar.

With a few drops of green food coloring and lemon juice, you can mix a fir green icing and decorate the Christmas cake with it.
