Chocolaty Syrniki for breakfast – chocolate quark balls

This sweet dish is a classic from Russian cuisine and is very popular for breakfast or brunch. This variant with cocoa conjures up a wonderful chocolate taste that is impossible to resist. A dab of sour cream and some jam is often served with it. Arranged with various berries or fruits, these chocolate Syrniki can of course also be served as a dessert.

  • 400 g granulated cream cheese
  • 1 egg
  • 5-6 tsp sugar
  • 1 tbsp baking cocoa
  • 2-3 tbsp flour
  • 1-2 tbsp vegetable oil
  • Sour cream, or yoghurt, to taste
  • Berries, or fruit, at will


  1. Put the cream cheese in a bowl.
  2. Add the egg, sugar, cocoa and flour.
  3. Knead well with a hand mixer to avoid lumps.
  4. Form the finished dough into small balls, then flatten them and then roll both sides in flour.
  5. Heat the vegetable oil in a pan and fry the syrniki over a low heat for approx. 3-4 minutes on each side.
  6. Serve the quark balls with sour cream or yoghurt, jam or berries.

Instead of flour, you can also roll the quark balls in semolina.
