Chocolate muffin cupcakes with blueberry frosting
Ingredients
Dough
- 300 g flour
- 100 g butter
- 110 g sugar
- 2 packs of baking powder
- 2 tbsp baking cocoa
- 2 eggs
- 250 ml milk
- Mark, one vanilla bean
Topping
- 120 g powdered sugar
- 200 g blueberries
- 300 g double cream cheese, or mascarpone
- 1 packet gelatine, ground
Utensils
- Hand mixer
- Bowl
- Muffin cups
- Piping bag
- Hand blender
- Mixing cup
Instructions
Prepare the batter
- Mix the butter, vanilla pulp and sugar.
- Stir in the eggs.
- Stir in the flour, baking powder, baking cocoa, salt and milk.
- Pour the batter into muffin cases.
- Bake the muffins in a preheated oven at 200 Bake for approx. 30-35 minutes.
Prepare the topping
- Pure the blueberries with powdered sugar.
- Stir in the mascarpone and gelatine and chill for 30-40 minutes.
- Pour the topping cream into a piping bag and decorate the cooled muffins with it.
- Top the cupcakes with fresh blueberries and serve.
