Ingredients

Dough

  • 300 g flour
  • 100 g butter
  • 110 g sugar
  • 2 packs of baking powder
  • 2 tbsp baking cocoa
  • 2 eggs
  • 250 ml milk
  • Mark, one vanilla bean

Topping

  • 120 g powdered sugar
  • 200 g blueberries
  • 300 g double cream cheese, or mascarpone
  • 1 packet gelatine, ground

Utensils

  • Hand mixer
  • Bowl
  • Muffin cups
  • Piping bag
  • Hand blender
  • Mixing cup

Instructions

Prepare the batter

  1. Mix the butter, vanilla pulp and sugar.
  2. Stir in the eggs.
  3. Stir in the flour, baking powder, baking cocoa, salt and milk.
  4. Pour the batter into muffin cases.
  5. Bake the muffins in a preheated oven at 200 Bake for approx. 30-35 minutes.

Prepare the topping

  1. Pure the blueberries with powdered sugar.
  2. Stir in the mascarpone and gelatine and chill for 30-40 minutes.
  3. Pour the topping cream into a piping bag and decorate the cooled muffins with it.
  4. Top the cupcakes with fresh blueberries and serve.
