Chocolate dessert with avocado and coconut milk

An unusual, healthy dessert with avocado that gets its chocolaty color from cocoa. Wonderfully refined with coconut milk and sweetened with honey, the chocolate pudding tastes surprisingly delicious.

An unusual, healthy dessert with avocado that gets its chocolaty color from cocoa. Wonderfully refined with coconut milk and sweetened with honey, the chocolate pudding tastes surprisingly delicious.

Ingredients

  • 3 avocado
  • vanilla pulp, a vanilla pod
  • 6 tbsp coconut milk
  • 3 tbsp cocoa powder, e.g. baking cocoa
  • 3 tbsp honey

Instructions

  1. Have the avocados and scoop them out.
  2. Put the avocado flesh in a bowl with the coconut milk, cocoa, honey and vanilla pulp.
  3. Mix everything with a hand blender until creamy.
  4. Pour the chocolate pudding into glasses.
  5. Sprinkle with the chopped pistachios.
  6. Garnish with a mint leaf.
  7. Chill the chocolate pudding with avocado in the fridge for about 1 hour.

Agave syrup or ripe banana can be used to sweeten the chocolate dessert. If you like it a little nutty, feel free to stir in roasted nuts. The coconut milk can be replaced with almond milk, soy milk or cow’s milk!
