Ingredients

  • 2 chicken thighs
  • 6 eggs
  • 1 tsp vegetable oil
  • 280 g corn, canned
  • 3-4 tbsp mayonnaise
  • Salt, to taste
  • Black pepper, to taste
  • Cucumber, to taste, optional
  • Herbs, to taste, optional

Instructions

  1. Cook the chicken thighs in salted water until done, about 30 minutes.
  2. Meanwhile, beat 1 egg with salt and pepper. The food processor with a whisk attachment is best suited for this, as this makes the mixture fluffy and more homogeneous.
  3. Grease the frying pan with oil and heat up.
  4. Distribute the fluffy foamed egg on the bottom of the pan and fry the omelette on both sides.
  5. Cook 5 more eggs in the same way.
  6. Remove the chicken thighs from the heat and let them cool.
  7. Remove the skin and remove the meat from the bones.
  8. Cut the meat into chunks.
  9. Stack the omelettes on top of each other and Cut into three portions.
  10. Chop each portion crosswise into thin strips.
  11. Mix the chicken, omelette strips, corn and mayonnaise together in a bowl.
  12. Serve the meat salad as an appetizer or between meals.

If desired, the salad can be prepared with cucumbers and herbs or simply garnished with them when serving.
