Ingredients

  • 4 onions
  • 1¹⁄₂ kg cauliflower, fresh or frozen
  • 6 apples
  • 50 g butter
  • 2 vegetable stock cubes
  • 1¹⁄₂ l milk
  • Black pepper, to taste
  • Green herbs, to taste

Utensils

  • knife
  • cutting board
  • pot
  • mixing spoon
  • hand blender

Instructions

  1. Cut the onions in half rings.
  2. Chop the cauliflower into very small pieces.
  3. Peel the apples, remove the core and chop the fruit.
  4. Melt the butter in a saucepan.
  5. Fry the onions until soft . Make sure they don’t get too brown!
  6. Add the cauliflower and apples to the onions and fry for another 5 minutes.
  7. Add the crumbled stock cubes and the milk and bring to the boil.
  8. Reduce the heat so that the soup is still gently simmering.
  9. Boil for 5 minutes until the ingredients are soft.
  10. Pure the soup with a blender until smooth.
  11. Before serving, season the cauliflower cream soup with pepper and sprinkle with chopped herbs.
