Cauliflower cream soup with apples and onions
Ingredients
- 4 onions
- 1¹⁄₂ kg cauliflower, fresh or frozen
- 6 apples
- 50 g butter
- 2 vegetable stock cubes
- 1¹⁄₂ l milk
- Black pepper, to taste
- Green herbs, to taste
Utensils

Instructions
- Cut the onions in half rings.
- Chop the cauliflower into very small pieces.
- Peel the apples, remove the core and chop the fruit.
- Melt the butter in a saucepan.
- Fry the onions until soft . Make sure they don’t get too brown!
- Add the cauliflower and apples to the onions and fry for another 5 minutes.
- Add the crumbled stock cubes and the milk and bring to the boil.
- Reduce the heat so that the soup is still gently simmering.
- Boil for 5 minutes until the ingredients are soft.
- Pure the soup with a blender until smooth.
- Before serving, season the cauliflower cream soup with pepper and sprinkle with chopped herbs.
