Ingredients

  • 1 head cauliflower
  • 100g butter
  • 2 cloves garlic
  • 40g flour
  • 600ml milk
  • Salt, to taste
  • Black pepper, to taste
  • 4 chicken breast fillets
  • 1-2 tbsp vegetable oil, + something to grease
  • 100 g cheese

Instructions

  1. Cut cauliflower into small florets.
  2. Then cook in boiling water for 2 minutes.
  3. Drain 240 ml of the liquid from the pot and set aside. Don’t use the rest of the water.
  4. Melt the butter in a pan over medium heat.
  5. Chop the garlic and sauté for 1 to 2 minutes.
  6. Add the flour, stir and make a roux.
  7. Remove the pan from Remove from the heat.
  8. Mix the warm milk and the reserved water together.
  9. Then pour into the roux in a thin stream.
  10. Return the pan to the heat and cook, stirring, until the béchamel sauce thickens.
  11. Season with salt and pepper.
  12. Cut the chicken breasts into small pieces.
  13. In another pan, heat the vegetable oil.
  14. Add the chicken and sauté for 2-3 minutes.
  15. Place the meat and cauliflower in a greased casserole dish.
  16. Sprinkle with salt and pepper.
  17. Pour the bechamel sauce over it.
  18. Bake the casserole for 25-30 minutes at 180°C.
  19. Sprinkle the cauliflower casserole with the coarsely grated cheese about 10 minutes before the end of baking.
