Briam vegetable casserole with tomatoes

Basically a vegetable casserole from Greek cuisine, Briam is the perfect summer meal for the whole family. The main ingredients are potatoes, zucchini, onions and tomatoes. Oregano, parsley and fresh garlic provide the flavor and aroma.

  • 2 potatoes
  • 2 zucchini
  • 1 onion
  • 4 cloves garlic
  • 35 g parsley greens
  • 2 tsp oregano, dried
  • Black pepper, to taste
  • Salt, to taste
  • 5 tbsp olive oil
  • 7 Tomatoes
  • 1 tbsp tomato paste
  • chili, to taste


  1. Slice the potatoes and courgettes.
  2. Chop the onion into rings or half rings.
  3. Finely chop the parsley and garlic.
  4. Place the sliced potatoes, onions and courgettes in a large bowl.
  5. Season with salt and pepper season.
  6. Add the oregano, fresh parsley, garlic and a generous amount of olive oil.
  7. Stir well so that all the vegetables are evenly mixed with the oil and spices.
  8. To prepare the sauce: Chop 5 tomatoes in a blender or grate.
  9. Dissolve 1 tablespoon of tomato paste in a little water.
  10. Put the tomatoes and the tomato paste in a saucepan and heat slightly.
  11. Season with chili to taste.
  12. Spread the tomato sauce on the bottom of a casserole dish.
