Baked salmon with sweet potatoes in honey marinade

Baked Salmon with Sweet Potatoes is a delicious dish. Crunchy sweet potato chunks and juicy salmon are the perfect duo for a gourmet dinner. Prepare a honey marinade from the given ingredients, mix the vegetables and fish with it. Then bake in the oven for just under half an hour and serve hot.

Ingredients

  • 2-3 garlic cloves
  • 1 piece ginger, about 3 cm long
  • 3 tbsp vegetable oil
  • 1½ tbsp honey
  • 3 tbsp soy sauce
  • ½ tsp Chinese spices, 5-spice blend
  • 2 sweet potatoes
  • 600-700 g salmon fillets

Instructions

  1. Peel the vegetables.
  2. Press the garlic, finely grate the ginger.
  3. Mix the oil, honey, soy sauce and spices in a bowl.
  4. Wash the sweet potatoes and cut into long pieces.
  5. Mix in half the marinade.
  6. Place on a baking tray lined with baking paper.
  7. Bake the vegetables for 15 minutes at 200°C.
  8. Cut the fish into portions.
  9. Coat with the remaining marinade and place next to the sweet potatoes.
  10. Cook in the oven for a further 10-12 minutes.
  11. Serve the baked salmon hot with sweet potatoes.

Tip

Sweet potatoes do not necessarily have to be peeled.
