Ingredients

  • 4 fillets of flounder
  • Salt, to taste
  • Black pepper, to taste
  • 1 lemon
  • 40-50g breadcrumbs
  • 50-60g Parmesan cheese
  • Italian herbs, to taste
  • 4 garlic cloves
  • 4 tablespoons vegetable oil

Instructions

  1. Rinse the fillets and pat dry with paper towels.
  2. Salt and pepper the fish.
  3. Finely grate the zest of the lemon.
  4. Be careful not to touch the white skin.
  5. Press the garlic through the garlic press.
  6. Put the breadcrumbs in a bowl with the finely grated Parmesan.
  7. Add the lemon zest, salt, pepper, Italian herbs and garlic and mix well.
  8. Roll the fish in the breading.
  9. Place the flounder in a baking dish greased with 2 tablespoons of oil .
  10. Drizzle with lemon juice and the remaining oil.
  11. Cook the fillets in the oven at 220°C for about 20 minutes.
  12. Serve the baked flounder fillets with a side dish of your choice or with a salad.
