Ingredients

Dough

  • 300 g flour
  • 2 egg yolks
  • 1 pinch salt
  • 150 g ground almonds
  • 200 g butter
  • 100 g icing sugar
  • vanilla flavoring

For dusting

  • 100 g icing sugar
  • 2 p. Vanilla sugar

Instructions

Dough

  1. In a food processor, process the butter, icing sugar, egg yolks, salt, vanilla essence, almonds and flour into a dough.
  2. Knead the dough with your hands and shape into a roll.
  3. Wrap the dough with cling film and knead for 30-40 minutes place in the fridge.
  4. Preheat the oven to 175 degrees.
  5. Cut the dough in half and place one half back in the fridge.
  6. Form the other half of the dough into a thin roll. Cut these into pieces.
  7. Form the pieces of dough into crescent-shaped vanilla croissants.
  8. It is important that the crescents are not too thin at the ends, otherwise they will brown quickly when baking.
  9. Put the vanilla croissants on a cookie sheet lined with baking paper Place in the tray and bake for 15 minutes at 175 degrees, making sure that they only brown slightly.

For dusting

  1. Mix the icing sugar with the vanilla sugar.
  2. Sieve the sugar mixture onto the still warm vanilla crescents.
  3. Vanille crescents allow the cookies to cool completely and enjoy for Christmas.
