Ingredients

  • 2.5 cups Chicken Broth
  • 1 tbsp Butter
  • 2 tbsp Onion, sliced
  • 3/4 cup Arborio Short Grain Rice
  • 1/4 cup Dry White Wine
  • 1/2 cup Green Asparagus
  • 10 King Prawns , or shrimp
  • 1/3 cup parmesan
  • salt, to taste
  • pepper, to taste

Utensils

  • pot
  • asparagus peeler
  • knife
  • pan
  • mixing spoon

Instructions

  • Boil the chicken broth in a saucepan and remove from the heat.
  • Peel the green asparagus and cut off the ends of the asparagus.
  • Chop the asparagus into small pieces.
  • Melt the butter in a pan and add the finely chopped onions.
  • Fry the onion until translucent.
  • Add the rice and stir well.
  • Add the wine to the rice. It’s best to use dry white wine!
  • The wine will soak into the bowl the fastest.
  • Don’t worry if the children eat with you – the alcohol evaporates very quickly, only the taste remains.
  • As soon as the wine has been completely absorbed by the rice, Gradually pour in the chicken broth, half a glass at a time.
  • Stir constantly.
  • After adding the third half glass of broth, add the asparagus to the risotto. Stir well.
  • After another half glass of broth, add the shrimp to the risotto.
  • Cook for another 3-4 minutes.
  • Once the shrimp have turned a nice pink hue – the risotto is ready!
  • Season the risotto with salt and pepper and serve warm.
  • Arborio short grain rice is an ideal risotto rice. Its unusual round shape, the pronounced floury body and a good bite are appreciated and loved by gourmets of Italian cuisine.
