Ingredients

  • 200 g pumpkin, peeled
  • 1 apple
  • 2 eggs
  • 1 pinch salt
  • 100 g sugar
  • 150 ml kefir
  • 130 g flour
  • 1 tsp baking powder
  • 2-3 tbsp oil

Instructions

  1. Grave the pumpkin along with the apple on a fine grater.
  2. Mix both in a bowl.
  3. In a separate bowl, beat the eggs with salt and sugar.
  4. Pour in the kefir and mix well.
  5. Pumpkin and Add the apple.
  6. Add the flour and baking powder and stir again.
  7. Heat the oil in a pan over low heat.
  8. Scoop out the batter and fry the potato pancakes in the pan until golden on both sides.
  9. Serve the pancakes with maple syrup or honey .
