Ingredients

  • 2-3 zucchini, young
  • 75 g parmesan
  • 3 eggs
  • salt, to taste
  • 100 g bacon
  • 3 cloves of garlic
  • 200 g spaghetti, or tagliatelle
  • black pepper, to taste

Instructions

  1. Cut the courgettes into thin slices or strips.
  2. Finely grate the parmesan.
  3. In a bowl, whisk the cheese well with the egg and salt.
  4. Dice the bacon.
  5. Chop the garlic.
  6. Cook the noodles in boiling salted water 2 minutes less than the package says.
  7. Meanwhile, sauté the pork belly in a dry pan for 5 to 6 minutes. The fat should melt.
  8. Add the garlic and black pepper to the bacon.
  9. Stir and continue cooking for 1 minute.
  10. Remove the pasta from the water and rinse in a colander, collecting the
  11. cooking water from the pasta.
  12. Add about 150ml of the cooking water, pasta and zucchini to the pan with the bacon.
  13. Stir and cook for 2 to 3 minutes.
  14. Remove the pan from the heat and add the eggs and cheese.
  15. Optional add a little more water.
  16. Stir the pasta vigorously.
  17. Add enough water to make a thick, creamy sauce.
  18. Serve the pasta carbonara warm immediately.
