American apple pie with lemons, cinnamon and nutmeg
Ingredients
Dough
- 500 g flour
- ½ tsp salt
- 120 g sugar
- 360 g butter, cold
- 1 egg yolk
- 60 ml water
Filling
- 8 apples
- ½ lemon
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp flour
- 50 g sugar
- 100 g brown sugar
- 40 g butter
- 1 egg white
- 1 tsp water

Instructions
Prepare the dough
- Mix the flour, salt and sugar in a bowl.
- Cut the cold butter into small cubes.
- Mix the flour, butter and egg yolk and work into fine crumbs.
- Gradually add the cold water and mix well knead into a soft dough.
- Roll into a ball, wrap in cling film and place in the fridge for 1 hour.
- Preheat the oven to 180°C.
- Roll out half the dough into a thin layer and place in a baking tin.
- Press the sides and base firmly.
- Place a sheet of baking paper on the dough.
- To weigh down, place approx. 200-300 g of dry peas, rice, other legumes or other groats on top so that the dough stays in the tin.
- Bake the cake base for about 10 minutes.
Prepare the filling
- Peel the apples and cut into thin slices.
- Squeeze out the lemon juice.
- Mix the fruit, lemon juice, spices, flour and both types of sugar together.
Prepare the cake

- Cut the butter into small pieces and place on the filling.
- Whisk the egg white and water with a fork.
- Roll out the second half of the dough into a thin layer.
- Cover the filling and the edges with it Press together.
- Cut a small hole or a few slits in the center of the cake to allow air to escape while baking.
- Grid the top of the cake with the beaten egg white.
- Bake the apple pie in the preheated oven for 50-55 minutes, until it is golden brown.
- Serve American apple pie warm or cold.
Chopped walnuts also go very well with the filling.
